Hello @Kain
I had an uncle with bipolar in the days when it was called Manic-depression. We talked about psych issues a lot as he also had a masters in psych .. so much for being professional .. it helps in that his life is better than those of earlier generations.
He was dreadfully promiscuous and lived in menage de trois for 10 years .. so your situation with your wife is not the worst case scenario.
I also did a little martial arts and took my son to taekwondo and mingled in that world for a while.
I understand the physicality of intimacy and how it could be easy to slip too far. That is something only you and her can really work out. It is different to the typical man-wife situation and I would think different rules apply, but also you are probably heavier etc .. you know the deal re weight class.
I also was a computer widow in my marriage. It was before online relationships were a thing .. but the point is the lack of communication betweeen partners and the sense of betrayal. As your marriage still seems in tact .. keep working on it and with luck you maybe able to save it .. good luck

Hi again @Kain,
Attempting to answer your questions in a basic way...
When in a manic cycle do we do this?
Your cycles will be unique to you, as is your situation.
They are all things that normally I find to be abhorrent behaviour toward anyone, especially those you hold dear. Why does it happen this way?
It may have something to do with distorted perceptions that you believe at the time. These are often a part of manic or hypermanic episodes. Lack of impulse control may be another part of it. People with bipolar often have a problem with this.
Good luck with your psych, they'll probably have better answers to this.
